Chocolate chip pumpkin spice granola
Nothing like a good pumpkin spice recipe to kick off Fall. As soon as the temps start dropping, we all start searching for pumpkin spice recipes. Trust me — this one is goooood. Add this granola to some greek yogurt and throw in some blueberries and dang. What a treat.
INGREDIENTS
3 cups rolled oats
3 tbsp sugar
1/4 cup light brown sugar
1 tsp sea salt
1 1/2 tsp pumpkin pie spice
1/2 cup olive oil
1/3 cup honey
2/3 cup pumpkin puree
1/2 cup mini chocolate chips
INSTRUCTIONS
Preheat the oven to 350 degrees and prepare a baking sheet with parchment paper.
Combine the rolled oats, sugar, brown sugar, sea salt, and pumpkin pie spice in a bowl.
Once combined, add in the olive oil, honey, and pumpkin puree.Stir until all ingredients are combined.
Spread the mixture on the prepared baking sheet and bake for 45 minutes. Check on it halfway through and stir it up a bit to ensure all sides of the granola are baked.
Let cool. The granola will harden a bit as it cools, don’t worry.
Now, sprinkle the mini chocolate chips with the granola once it is cool, go get some yogurt, and enjoy an amazing breakfast. Or eat it by itself. The options are endless!
